Beef Caldereta is a hearty meat dish using beef or pork combined with potatoes, carrots, tomato sauce, and liver spread or liver paste.

Ingredients:

1 kg beef (kalitiran)
1.5 cup calamansi juice
10 pcs peppercorn, crushed
2 tbsp salt
2 gloves garlic crushed
1/2 cup cooking oil
1 cup onion, sliced
1 cup tomato sauce

2 cups boiling water
2 cups red or green pepper cut in strips  

2 pcs potatoes

1 medium size carrot 
1 pc laurel or bay leaf
Dash or hot sauce
1/4 liver spread

Procedure:

1. Marinade beef in mixture of calamansi juice, peppercorn, salt and crushed garlic for 2 hours.
2. Fry pieces of beef in cooking oil and onions and saute until tender.
3. Pour in tomato sauce and boiling water.
4. Add the green pepper, potatoes, carrots, and bay leaf.

5. Cover and simmer until meat is tender, blend in liver spread, cook 5 minutes more.
